Cookie "Salad"


(This recipe was first posted in conjunction with the Meijer Ad Week of 5/27/12 - 6/2/12)

This "salad" is a fun change from the average jello.  It's definitely kid-friendly, both in flavor and ease of preparation.  The combination of ingredients might sound a little strange, but it's actually pretty good!

Ingredients:
1 - 3 oz box instant vanilla or coconut cream pudding
1 C milk
1 tsp vinegar
1 - 8 oz container Cool Whip, thawed
1 - 20 oz can crushed pineapple, drained
1 - 11 oz can mandarin oranges, drained
1/2 pkg fudge-stripe cookies, crushed

Directions:
Mix milk and vinegar, then beat in pudding for two minutes.  Add Cool Whip and fruit.  Refrigerate until ready to serve.  Add crushed cookies just before serving. 

Options and Tips
  • Substitute canned peaches, pears, or fruit cocktail for the mandarin oranges.
  • Warning:  leftovers do not keep very well...the cookies get soggy after a day or so.
    I got this recipe from a copy I made...not sure where it came from!
