Almost Cactus Bread (Dessert Pizza)


If you only need one main-dish pizza, dessert pizza is a great (and delicious!) use for that second pizza crust.  My recipe is based on a copycat recipe for Pizza Ranch's cactus bread.  I tried it per the suggestion of the same person who gave me that great pizza crust recipe, but we both decided that it needed a little adjustment.  It still doesn't LOOK the same as that Pizza Ranch specialty, but the flavor is pretty close to the mouth-watering original!

Ingredients:
Pizza:
1 12-14" unbaked, plain pizza crust
2 Tbsp butter, melted
3 Tbsp sugar
1 tsp cinnamon
Topping:
3 Tbsp sugar
1/4 C flour
1/8 tsp cinnamon
dash salt
2 Tbsp cold butter, cubed
Glaze:
1 Tbsp butter, melted
1 Tbsp + 1 tsp milk
1/2 tsp vanilla
1 C powdered sugar

Directions:
Preheat oven to 475 degrees.  Brush crust with 2 Tbsp melted butter.  Mix together 3 Tbsp sugar and 1 tsp cinnamon.  Sprinkle mixture over crust.  Prepare the topping:  mix together sugar, flour, cinnamon, and salt.  Cut in the cold butter with a pastry blender or fork, until large crumbs are formed.  Sprinkle over pizza.  Let prepared pizza rise 15-30 minutes.  Bake at 475 degrees for 7-9 minutes.  Meanwhile, prepare the glaze.  When pizza is finished baking, remove from oven and let cool for a few minutes.  Drizzle glaze over pizza.  Cut into slices and serve warm.
Options and Tips
  • To serve regular pizza and dessert pizza in the same night, follow this process:  Roll out both pizza crusts.  Brush your main dish pizza crust with olive oil and let it rise while you are topping the dessert pizza.  Top the dessert pizza and let it start rising.  Then top your main dish pizza and bake to desired done-ness.  While pizza is baking, prepare the glaze for the dessert pizza.  When main dish pizza is finished baking, turn up the oven temp and pop the dessert pizza in the oven.  Sit down for dinner and enjoy your main dish pizza while the dessert pizza is baking.  When the dessert pizza is finished baking, drizzle with glaze, cut into slices, and enjoy!
  • I make the dessert pizza with homemade pizza crust, but you could use a plain, unbaked, store-bought crust as well.
