Apple Brownies

[This recipe was first posted in conunction with the Meijer Ad week of 9/30/12-10/6/12]

I tend to associate different seasons with different foods, and of course, what would fall be without apple recipes?  I love the cinnamony-smell that wafts through the house when I'm baking these deliciously soft-yet-chewy bars.  They're quick to throw together, and they're perfect for lunches.  Oh, and your house will smell wonderful while they're baking!  Enjoy!

Ingredients:
3/4 C (1 and 1/2 sticks) butter or margarine, softened
2 C brown sugar
2 eggs
1 tsp vanilla
2 C flour
1/2 tsp salt
2 tsp baking powder
1 C peeled and chopped apples
cinnamon-sugar, to taste

Directions:
Preheat oven to 350 degrees.  Cream butter and sugar.  Beat in eggs and vanilla.  Add flour, baking powder, salt, and apples.  Mix well.   Spread in a greased 9x13 pan.  Sprinkle with cinnamon-sugar.  Bake, uncovered, for 30 minutes.

Options and Tips:
  • For once, I'm speechless.  These are straight-forward and easy to make.  But you can check out the how to make these brownies into a fabulous fall dessert here.
This recipe comes from Ruth Baas.  It can be found on page 96 of Adams Christian School's 2008 Tasting Bee Cookbook.

  1. Well I was speechless when I ate them. :-) I could tell even before I made them that they would be a winner! A perfect treat for this time of year - but they would be so easy to make anytime and they are so very very nummy. The cinnamon sugar spinkle on the top is a huge must. I will be sharing this recipe with many. Great for lunches and giving away. Thank-you! I still make your white bread recipe all the time!

  2. Made these tonight and all four of us LOVED them!!! Great recipe! Thank you! Wondering if you have ever experimented with the 2 c. brown sugar though? Could you use a little less for less sweetness? Also, how much cinnamon/sugar do you put on top?

    1. I have not experimented with the sugar quantities, sorry! I save a lot of my experimenting for cooking instead of baking, because baking can be a bit of an exact science. For the cinnamon-sugar: I just lightly sprinkled white sugar on the surface of the unbaked brownies, and then generously sprinkled on the cinnamon. Almost the entire surface should have either cinnamon OR sugar on it. Hmmm, so much for an exact science, huh?

  5. Linking up after you at Tasty Tuesday - these look so good! We have a great harvest of apples this year, and I may have to try this recipe. And serving with ice-cream and caramel topping on top would be perfect (as your link suggested). Thanks!

  7. I do make them with 1 stick of margarine and 1 1/2 cups of brown sugar - but that is the most of I have cut back with good results. Enjoy.

    1. really any kind works but Granny Smith or a different tart apple give them the strongest flavor
