Cheese and Bacon Potato Rounds

These bite-sized appetizers have the chewy texture and all the flavor of potato skins...without all the work!  The classic toppings of bacon, green onion, and cheese combine to create an easy and delicious treat.

Options and Tips:
  • Line your cookie sheet with foil to cut down on clean-up time.
  • Brushing the slices with butter is not an exact science.  Just lay out all the slices on the foil-lined pan, slop the butter on the slices, flip them all over, and brush the opposite sides of the slices.  It doesn't matter if each slice is not perfectly covered with butter, or if it drips off the slice onto the foil.  I used a little more butter than the recipe called for...probably because I wasn't super careful with this step.  Maybe I have to brush up on my brushing skills :)
  • For even more flavorful potato rounds, try sprinkling the slices with a little garlic powder or seasoned salt after brushing them with butter.
  • You can dip these in sour cream as suggested, or mix up equal parts Ranch dressing and barbeque sauce and serve that as the dip (my favorite).
