California Club Wraps
(Sale ingredients based on the Meijer ad week of 3/31/13 - 4/6/13)
The weather is just starting to warm up here in Michigan...which always makes me ready for some lighter fare. These wraps are perfect for a hearty lunch or a light supper. Guacamole adds creamy flavor and pairs perfectly with the salty bacon. Topped off with plenty of lettuce and tomato, these wraps make for a fairly healthy main course. Follow the recipe below, or customize it to suit your family's tastes by subbing in different meats and cheeses.

Feta & Spinach Turkey Burgers
Quick! Add these to your menu before it gets too cold to grill! These burgers are a tasty change from the typical beef burger. Not only that, but if you're looking to eat healthier, turkey is much lower in fat than beef. My husband said it was obvious the burgers were healthier because there was hardly any grease dripping from them while he was grilling. In spite of being healthy, the burgers are packed with flavor, and surprisingly moist. Come on, don't turn your nose up...these are seriously delicious!

31 Days:: Produce Drawer Quesadillas
This delicious version of quesadillas was created one night when I emptied out my vegetable drawer. I had little bit of a lot of different things...so that was what went into the quesadillas. Making quesadillas is a great way to use up bits and pieces of vegetables (or other leftovers) before they go bad. For that reason, I'm including this recipe as part of 31 Days of Saving Money in the Kitchen. Oh, and it just so happens that the ingredients I used in our quesadillas are on sale at Meijer this week :) We loved this combination of vegetables, but feel free to customize it and use whatever you have in your produce drawer!

Pepperoncini Beef

Two ingredients are all you need to make this delicious sandwich filling! Serve it on a bun and top it with cheese for a quick weeknight meal, or wrap it in a tortilla for a nice change from ham-n-cheese-for-lunch-again.

Tropical Chicken Salad

This chicken salad is delicious on bread, bagels, and croissants. The almonds and celery give it just the right crunch, and the pineapple adds a hint of sweetness.

Club Quesadillas

I love warm weather, so I resist cranking on the A/C as long as we can handle it...which means that I'm always on the look-out for meals that don't heat up the kitchen. This main dish sandwich is perfect for those warm spring and summer evenings. It's cool and refreshing, and comes together quickly...so you won't spend a lot of time in the kitchen after a long, hard day at the beach or pool.

Easy Weekend Meal: Baked Sandwiches
Need an easy meal this weekend? Check out these delicious, easy baked sandwiches, from Andrea at Simple Organized Living. I've made these sandwiches multiple times and I get requests for the recipe each time. The sandwiches are made on brown-n-serve rolls* (on sale at Meijer this week for 99 cents), topped with a yummy sauce, and then baked until the tops get slightly crispy. You can use any variety of deli meat and cheese you happen to have in the house, and you only need to get one measuring spoon dirty when you make the sauce (measure the dry ingredients first, then the moist ones). I hope you like these sandwiches as much as we do!

Cowboy Burgers

I got brave this weekend and tried mixing some canned beans into our hamburger patties. They're a little more of a pain to grill (they crumble a little easier), but it's an easy way to stretch a pound of beef into 6 large burgers...and we thought they tasted great! If you prefer no beans, just use regular hamburger patties with this yummy combination of toppings.

Restaurant-Style Grilled Sandwiches
As I planned my dinners this week, I found that the Meijer ad was not particularly helpful or inspiring :( There weren't a lot of good, cheap ingredients that I could put together....at least, not for the kind of food that I like to make! {Oh, sure, there was chuck roast on sale...but you all know how to make a roast, so I wasn't going to post a recipe for that!}
Anyways....when
this happens, I try to use ingredients from my pantry (bought weeks
or months ago when they were on sale!) rather than pay full price for
other ingredients. But another favorite solution to uninspiring sale ads is grilled sandwiches. There are so many delicious ways to make these sandwiches,
and I'm willing to bet that you have most (or all) of the components
for these sandwiches in your refrigerator, just waiting for you to
use your imagination! The result usually tastes like something you could order from Applebees...and in less time than it takes to drive there and pick up a to-go order!
