Cookies For Breakfast, Part Two
We've already talked about how cookies can be part of a healthy breakfast (insert smirk). My family really enjoys these cookies, but I had seen another version of the breakfast cookie on Pinterest, so I wanted to try this one as well.
This cookie recipe definitely has more than 2 ingredients, so it takes a little longer to mix up. But it does include protein, which adds to the health benefits of, well, eating cookies for breakfast.

Freezer Breakfast Burritos
In keeping with our theme of great vacation food, here is a great breakfast recipe! These burritos are prepared ahead and frozen, and then warmed up in the microwave when it's time for breakfast. Unless, of course, you're roughing it and you don't have a microwave. In that case, you can try freezing just the filling, then warming it up in a skillet and stuffing the burritos on-site. Whether you take these on your next camping trip, or just enjoy them in the comfort of your own home, these make-ahead burritos are tasty...and it's sure convenient to have homemade fast food in the house! Our kids love having these in the freezer because it's a breakfast that they can "make" themselves.

Make It or Buy It? Granola
I think it's about time for a Costco recipe! I shop Costco at least twice a month, and there are some ingredients that are always cheaper there than anywhere else...even if I compare it to a "Meijer sale minus coupon" price.
My family eats a lot of yogurt parfaits, and we top them with this simple and versatile homemade granola. See the options and tips section below for more uses for this yummy granola.
Costco Ingredients Used:
- Quaker old fashioned rolled oats ($7.49/10 lb box)
- honey ($11.99/5 lb jug)
- cinnamon ($2.59/10.7oz container)
Yogurt Parfait

A few years ago we visited some friends who served us yogurt parfaits as part of a light breakfast. We really enjoyed the simple treat, and I bought the ingredients for parfaits as soon as we got home. We've eaten a LOT of yogurt parfaits since then...if I had to guess, I'd say I've made well over 500 parfaits in the last few years! My husband eats one for breakfast almost every day, and my kids will quite often choose this for an after-school snack. I hope you enjoy this (somewhat healthy!) treat as much as we do!

Make It Or Buy It? English Muffin Bread
English Muffin Bread is something our family really enjoys...but it's so expensive to purchase at the grocery store! (For example, Family Fare has it on sale this week for $2.99 per loaf.) That's why I was excited to find a simple, easy recipe for English Muffin Bread on one of my favorite websites, Simple Organized Living. (Please note, the link to the recipe will take you to a recipe for Ham, Egg, and Cheese Sandwiches on English Muffin Bread...so the bread recipe is in the middle of the sandwich recipe somewhere.) Andrea of Simple Organized Living is a local blogger who posts great recipes, in addition to her many informative posts on organizing, time management, and much more.
I made the bread for the first time earlier this week...and it was super easy, as well as delicious! We like the bread toasted, with the same kind of toppings you'd put on an English Muffin...peanut butter and jelly, or butter and cheese.

French Toast Bake
This breakfast dish is so yummy it could almost be dessert! A friend brought this over after our 4th child was born, and it was such a hit with our family that I had to ask for the recipe. I've made it for breakfast as well as supper, and it would also make a great coffee-time treat.
