Ingredients:
Muffins:
1 1/3 cups flour
1 cup sugar
1/2 tsp baking soda
1/4 tsp salt
1 Tbsp poppyseeds (optional)
1 Tbsp poppyseeds (optional)
1 egg
1/2 C sour cream
1/3 C butter or margarine, melted
2 Tbsp orange juice
1 Tbsp grated orange peel

1 stick butter or margarine, softened
3 oz cream cheese, softened
1/4 C powdered sugar
1 Tbsp grated orange peel
Directions:
Muffins: Stir together dry ingredients. Set aside, then beat together egg, sour cream, butter, orange juice, and orange peel. Mix liquid and dry ingredients until just moistened, then pour into paper-lined muffin cups. Bake 16-18 minutes at 400 degrees. Makes about 10 muffins.
Spread: Beat all ingredients together. Serve with muffins. Refrigerate leftovers...but each time you want to serve the spread, you'll have to warm it slightly in the microwave to soften it.

Options and Tips
- Orange juice made from frozen concentrate works just as well, and will help keep down the cost of this recipe.

ReplyDeleteI had these at Lisa's house a couple years ago & they are fantastic! I was sure she bought them from a little bakery b/c surely you can not whip up something this tasty within your own home:) She thew them on the table like it was no big deal to have orange muffins with a special cream cheese just sitting around the house. Cracked me up. Highly recommendable.

ReplyDeleteI made these muffins yesterday for the first time...and fell in love! Even my daughter, a picky eater, gobbled one up for breakfast this morning :) These muffins are great on their own, but the spread on top makes for a delectable finish! Can't wait to make another batch :)
