Chocolate Dream Cake

(This recipe was originally posted in conjunction with the Meijer Ad Week of 3/25/12 - 3/31/12)

This cake is soooo yummy.  The name is just something I made up, because no one really knows what it's called!

Ingredients:
Cake:
1 white cake mix
2 C water
2 egg whites (reserve yolks!)
1 - 3 oz instant chocolate pudding
Frosting:
1/3 cup margarine OR real butter, melted and slightly cooled
2 egg yolks
1 C powdered sugar
12 oz Cool Whip (or 1 1/2 8oz containers)

Directions:
Preheat oven to 350 degrees.  Beat cake ingredients together on high speed for 4 minutes.  Pour batter into greased 9x13 pan.  Bake 30-35 minutes or until middle tests clean with a toothpick.  Cool.  Frosting:  Beat together egg yolks and powdered sugar.  Add melted margarine and beat until smooth.  Fold in Cool Whip.  Frost cake with mixture.  Optional:  top with crushed Heath bars, shaved chocolate, or toasted coconut.  Refrigerate frosted cake.

Options and Tips
  • Meijer quite often has their store brand instant pudding on price drop or in-store special.  If you can't find it cheap enough there, Aldi's price is 49 cents, and I've had good success with that brand in this recipe.

This recipe was given to me by Lois Engelsma and Audra VanOverloop.
